Breakfast has ceased to be a simple formality to become one of the most valued hallmarks of high-level hospitality. In this evolution, Ibiza will be represented among the contenders for the award for Best Hotel Breakfast in Spain 2026, an award promoted by Madrid Fusion, which celebrates its third edition this year.
Throughout 2025, the gastronomic congress team has toured numerous establishments in the country to select the nine nominated hotels, grouped in the categories of Boutique Hotels and Grand Hotels. All of them will be evaluated by a jury of experts who, by secret ballot, will decide the winners. The verdict will be made public on the stage of Madrid Fusión Pastry, during the congress to be held on January 26, 27 and 28, 2026. In addition, a special mention will be awarded to the best bet for quality coffee.
The most unexpected breakfast… is also served in Ibiza.
The Ibizan representation comes from The Unexpected Ibiza Hotel – Ushuaïa Beach Hotel, whose proposal has been selected for its groundbreaking character and its gastronomic ambition from early in the day. Under the slogan “The Unexpected Breakfast”, the hotel turns breakfast into an experience that combines music, hedonism and culinary creativity.
Far from a conventional offer, the establishment displays a staging that surprises from the first moment: a Ferris wheel full of knick-knacks, a hot chocolate fountain and an atmosphere that contrasts with the fact that the breakfast area functions as a disco until well into the early hours of the morning. Even so, the proposal stands out for its spaciousness and a clear commitment to quality products.
The tour begins with a stop for 5J ham and Iberian cured meats, followed by various stalls offering grilled red meats, freshly opened oysters, crêpes and waffles made on the spot, as well as yogurts, anchovies and a wide variety of egg dishes. Pastries and bread receive special attention, and there is no lack of specific spaces for healthy, vegan and kilometer 0 proposals.
An offer that breaks the mold and places Ibiza among the destinations capable of setting trends also in the hotel breakfast.
The other finalist hotels of the award
Along with the Ibizan establishment, the jury selected eight other hotels throughout Spain. In the Boutique Hotels category are the Hotel Lera (Castroverde de Campos, Zamora), the Hotel Balarés (Ponteceso, A Coruña), the Hotel Nafarrola (Bermeo, Vizcaya) and the CoolRooms Palacio de Atocha (Madrid).
In the Grand Hotel category, Hotel Huerto del Cura (Elche, Alicante), Sea Grill Puente Romano (Marbella, Malaga), Castilla Termal Monasterio de Valbuena (San Bernardo, Valladolid) and La Residencia Belmond (Deià, Mallorca) complete the list.
Breakfast, a new symbol of hotel excellence
The third edition of this award confirms a clear trend: breakfast has become a strategic element for hotels that aspire to differentiate themselves. Local produce, careful preparation, personalized service and a narrative coherent with the environment are decisive factors today.
We will have to wait until the end of January 2026 to know the winners, but the selection already leaves an obvious conclusion: Ibiza is part of the national map of gastronomic excellence from early in the day, and it does so with a proposal as surprising as it is true to its spirit.
