This Thursday, December 26th, the City Council of Ibiza through its Department of Commerce and Markets is once again organizing the traditional Christmas Sauce competition. It is an event that seeks to disseminate and maintain this traditional recipe typical of Ibizan gastronomy.
This year there are two categories: with broth and without broth, and participants may register in one or both indistinctly. Those interested in participating can write for free by sending an email to comercio@eivissa.es before 14h on Thursday 26 December, and must come at 16:30h to the tent located in the Paseo Vara de Rey with its sauce in a closed container and that is suitable for heating in a bain-marie. From 17h will begin the tasting by the jury, which this time will consist of a representative of Sabors de Eivissa, the cook Catalina Riera de Can Alfredo and a member of the colla de Sa Bodega. The jury will choose a prize for the winning sauce in the category with broth, another for the category without broth, and an overall winner. The winners will receive a basket with local product valued at 350 €. The jury will value among other things the appearance and taste of the dish, as well as the respect for the traditional recipe and of course the use of local product for its preparation. “The main objective of the contest is to maintain and disseminate the Ibizan gastronomic traditions by people fond of cooking,” said the councilor of Commerce, Alex Minchotti.
