The Mercat Nou of Ibiza has become this December 10, 2025 in the epicenter of the flavors of autumn with Temps de tardora tasting of calamari with sobrasada that has kicked off the Christmas campaign of the Consell de Ibiza. The initiative seeks to reinforce the consumption of local products and remember the culinary richness that accompanies the celebrations in the homes of the island during these festive dates.
Seasonal gastronomy to reclaim our roots
The Councilor for Economic Promotion, Maria Fajarnés, stressed the importance of seasonal cuisine as an element of Ibiza’s identity. “It is a cuisine that reflects our roots and that differentiates us by quality and flavor,” he said, stressing that autumn is an ideal time to focus on the countryside and the sea, and on the gastronomic heritage that defines the territory.
In this line, Fajarnés has remarked that the proposal aims to encourage residents and visitors to incorporate local products on their Christmas tables, thus strengthening a key sector for the economic and cultural development of the island.

Support for local commerce and municipal markets
The councilor of the City Council of Ibiza, Sara Barbado, has highlighted the strategic role of municipal markets and local commerce. He defended the need to continue working in a coordinated manner to give visibility to the producers and processors of the island: “The products that are born, grow and are transformed in Ibiza deserve a solid platform. We will continue to promote initiatives that value the work of producers, farmers and local businesses”.
In addition, both Barbado and Fajarnés have coincided in highlighting the success of the recent Fira de Sabors de Vara de Rey, an event that, according to both, demonstrates the growing public interest in discovering and consuming Ibizan products.
The star dish of the day was a classic combination of local recipes: squid with sobrasada, prepared on the spot by chef Pere Tur, owner of the Sa Nansa restaurant. The dish has offered attendees an authentic flavor and deeply linked to the seafaring and peasant tradition of Ibiza.
Recognition of the primary sector and the local quality label
The promotional action has also highlighted the essential role of the primary sector. The Fishermen’s Guilds have participated highlighting the importance of the Peix Nostrum seal, which guarantees the origin and quality of local fish. Likewise, the Carn & Coop livestock cooperative, together with the Can Ros and Es Cucó butcher’s shops, recalled the importance of pork raised on the island, which is fundamental in the traditional slaughter products.
To close the event, Councilor Fajarnés encouraged the public to continue betting on local products during these dates: “Behind each elaboration there is the work, effort and dedication of our producers, fishermen and artisans, who keep our culinary identity alive”.
