Maria is a lifelong Ibicencan, a textbook “payesa”. If she had to choose a plan, that would be a meal with her group of childhood friends. They have known each other since they were little, but over the years, many of them have moved away and don’t see each other as much as they would like to. Every winter, the week before Christmas, they have a meal to catch up on their year, news, gossip and lots of chatting. Blavós restaurant was their choice last year, and they remember it as a place to enjoy Mediterranean gastronomy with quality dishes, such as a baked sea bream fillet with saffron sauce and seasonal vegetables, or perhaps a faux green risotto with bimi, kale and spinach. New Year’s Eve at Blavós
Juan was born in Ibiza and has lived most of his life on the island. Although his family continues to live in Ibiza, work has separated him from them, moving him out of Spain. However, every Christmas he returns home to spend the holidays with his family. To take advantage of his visit, Juan and his family decide to spend New Year’s Eve in a special place, where they can enjoy local, Mediterranean gastronomy. Their choice for several years has been Blavós. The special New Year’s Eve menu stands out for presenting quality dishes, prepared and designed by chefs in Ibiza. It starts with the mini macaron of foie with caramelized apple, one of the appetizers, followed by the exquisite starter, roasted scallop with celeriac parmentier and black olive earth, a journey through the local cuisine. The main courses: cod confit stew with sweet potato and potato spheres and beef sirloin steak in its juice with apple cream and candied vegetables, are the most awaited dishes by Juan.

Sofia has been a resident of Ibiza for five years. She admires the tranquility of the island in winter, after a vibrant and hectic summer.
