{"id":137159,"date":"2025-11-14T08:01:59","date_gmt":"2025-11-14T07:01:59","guid":{"rendered":"https:\/\/lavozdeibiza.com\/sin-categorizar\/ibiza-joins-the-global-underwater-wine-craze-other-underwater-methods-around-the-globe\/"},"modified":"2025-11-14T09:06:22","modified_gmt":"2025-11-14T08:06:22","slug":"ibiza-joins-the-global-underwater-wine-craze-other-underwater-methods-around-the-globe","status":"publish","type":"post","link":"https:\/\/lavozdeibiza.com\/en\/current-news\/ibiza-joins-the-global-underwater-wine-craze-other-underwater-methods-around-the-globe\/","title":{"rendered":"Ibiza joins the global underwater wine craze: other underwater methods around the globe"},"content":{"rendered":"<p data-start=\"0\" data-end=\"613\" data-is-last-node=\"\" data-is-only-node=\"\"><strong>Wine aging under the sea<\/strong> may sound like an unusual practice, but for several years it has been applied in different regions of <strong>Spain and in other countries around the world.<\/strong> And now a project plans to implement this innovative form of maturation in the <strong>waters of Ibiza in the Mediterranean Sea<\/strong>.<\/p>\n<ul>\n<li>\n<h5><a href=\"https:\/\/lavozdeibiza.com\/en\/current-news\/underwater-wine-buoys-in-ibiza-this-is-the-first-mediterranean-project-with-15-capsules-and-4000-liters-of-wine\/?swcfpc=1\">Underwater wine buoys in Ibiza: this is the first Mediterranean project with 15 capsules and 4,000 liters of wine<\/a><\/h5>\n<\/li>\n<\/ul>\n<p data-start=\"0\" data-end=\"613\" data-is-last-node=\"\" data-is-only-node=\"\">This technique arose from fortuitous discoveries: <strong>bottles found in old shipwrecks<\/strong> that, when rescued and analyzed by specialists, were surprisingly well preserved. Based on these findings, several wineries decided to experiment with underwater aging, seeking to reproduce under the sea the conditions that seemed to have protected and improved those submerged wines for decades. <\/p>\n<p data-start=\"677\" data-end=\"1140\">Underwater wine aging -a technique that consists of submerging bottles or barrels at different depths- has found followers in <strong data-start=\"976\" data-end=\"1069\">Spain, France, Italy, Chile, Croatia, Greece, the United States, Australia and other countries<\/strong>, which have developed both commercial and experimental projects.<\/p>\n<p data-start=\"1142\" data-end=\"1638\">The principle of this practice is to <strong data-start=\"1182\" data-end=\"1267\">take advantage of the marine environment to accelerate or modify wine aging.<\/strong><\/p>\n<p data-start=\"1142\" data-end=\"1638\">The determining factors include <strong data-start=\"1311\" data-end=\"1434\">hydrostatic pressure, total darkness, the gentle movement of currents and the absence of atmospheric oxygen<\/strong>, conditions that, according to those leading these initiatives, result in <strong data-start=\"1512\" data-end=\"1600\">fresher, rounder<\/strong> wines <strong data-start=\"1512\" data-end=\"1600\">with silky texture and distinctive mineral and saline profiles.<\/strong><\/p>\n<h2 data-start=\"1645\" data-end=\"1687\">Spain, pioneer in &#8220;underwater wine&#8221;.<\/h2>\n<p data-start=\"1689\" data-end=\"2233\">With almost twenty active projects on its coasts, Spain is one of the countries that has developed this technique the most.<\/p>\n<p data-start=\"1689\" data-end=\"2233\">The <strong data-start=\"1823\" data-end=\"1842\">Crusoe Treasure<\/strong> winery, located in the <strong data-start=\"1858\" data-end=\"1889\">Bay of Plentzia (Biscay)<\/strong>, was one of the first in the world to have a legal concession and sanitary registration.<\/p>\n<p data-start=\"1689\" data-end=\"2233\">Its underwater cellar, at a depth of 20 meters, is part of a <strong data-start=\"2048\" data-end=\"2115\">500 m\u00b2 artificial reef that houses more than 1,000 species<\/strong>, turning the site into a space for marine breeding and research at the same time.<\/p>\n<p data-start=\"2235\" data-end=\"2651\">Crusoe Treasure has produced more than<strong> 8,000 bottles since 2010<\/strong> and also experiments with other products such as beers, cavas, rum and whiskey. Its wines have &#8220;very intense aromas from the corkage, silky texture and a characteristic saline-mineral touch&#8221;. <\/p>\n<p data-start=\"2235\" data-end=\"2651\">In addition, <strong data-start=\"2539\" data-end=\"2611\">they collaborate with universities to study marine climate change<\/strong>, combining oenology with environmental R&amp;D.<\/p>\n<p data-start=\"2653\" data-end=\"3188\">In the <strong data-start=\"2659\" data-end=\"2682\">eastern Cantabrian Sea<\/strong>, the <strong data-start=\"2694\" data-end=\"2707\">Marevinum<\/strong> winery immerses its wines in the Tina Mayor estuary (Asturias), and extracts them covered with <strong data-start=\"2790\" data-end=\"2822\">barnacles, sponges and corals<\/strong>, which give each bottle a unique appearance.<\/p>\n<figure id=\"attachment_136844\" aria-describedby=\"caption-attachment-136844\" style=\"width: 1227px\" class=\"wp-caption alignnone\"><a href=\"https:\/\/lavozdeibiza.com\/actualidad\/ibiza-se-suma-a-la-fiebre-mundial-del-vino-submarino-otros-metodos-bajo-el-mar-en-todo-el-planeta\/attachment\/captura-de-pantalla-2025-11-13-071504\/\" rel=\"attachment wp-att-136843\"><img decoding=\"async\" class=\"size-full wp-image-136843\" src=\"https:\/\/lavozdeibiza.com\/wp-content\/uploads\/2025\/11\/Captura-de-pantalla-2025-11-13-071504.jpg\" alt=\"\" width=\"1227\" height=\"809\" srcset=\"https:\/\/lavozdeibiza.com\/wp-content\/uploads\/2025\/11\/Captura-de-pantalla-2025-11-13-071504.jpg 1227w, https:\/\/lavozdeibiza.com\/wp-content\/uploads\/2025\/11\/Captura-de-pantalla-2025-11-13-071504-300x198.jpg 300w, https:\/\/lavozdeibiza.com\/wp-content\/uploads\/2025\/11\/Captura-de-pantalla-2025-11-13-071504-768x506.jpg 768w\" sizes=\"(max-width: 1227px) 100vw, 1227px\" \/><\/a><figcaption id=\"caption-attachment-136844\" class=\"wp-caption-text\">Wine aged under the sea, a growing trend.<\/figcaption><\/figure>\n<p data-start=\"2653\" data-end=\"3188\">The <strong>Bodega BH SL<\/strong>, which promotes the project in the Pitiusa, also has its wine buoy management in <b>Saint-Jean-de-Luz, <\/b><span style=\"font-weight: 400;\">a French commune, located in the department of Pyr\u00e9n\u00e9es-Atlantiques in the region of New Aquitaine on the shores of the Bay of Biscay. <\/span> <\/p>\n<p data-start=\"2653\" data-end=\"3188\">This is an underwater white wine with 10.5% alcohol content. The Atlantic blend of coastal vineyards is characterized by the following aromas:<span style=\"font-size: 16px;\">nori seaweed, iodine, quince, chamomile and sea crab&#8221;.<\/span> <\/p>\n<p><span style=\"font-size: 16px;\">On the other hand, it is worth mentioning the <\/span><strong style=\"font-size: 16px;\" data-start=\"2905\" data-end=\"2942\">Bodega Submarina del Mediterr\u00e1neo<\/strong><span style=\"font-size: 16px;\">in Cabo de las Huertas (Alicante), which works together with the University of Alicante to scientifically monitor depth, time and temperature. <\/span><strong style=\"font-size: 16px;\" data-start=\"3060\" data-end=\"3097\">depth, time and temperature<\/strong><span style=\"font-size: 16px;\"> during the aging of more than 30,000 bottles per year.<\/span><\/p>\n<p data-start=\"2653\" data-end=\"3188\">Each year the bottles are submerged for 12 months of underwater aging, leaving 10% of the production on land for comparative evolution studies.<\/p>\n<h3 data-start=\"3195\" data-end=\"3236\">Italy and France: sparkling wines and science<\/h3>\n<p data-start=\"3238\" data-end=\"3621\">In Italy, the most prominent project is <strong data-start=\"3278\" data-end=\"3288\">Abissi<\/strong>, a sparkling wine from winemaker Piero Lugano (Bisson), which has been aged at a depth of 40 meters in the Ligurian Sea since 2009.<\/p>\n<p data-start=\"3238\" data-end=\"3621\">To this end, he developed a <strong data-start=\"3435\" data-end=\"3471\">steel-coated stopper<\/strong> capable of resisting salt corrosion. Its success has inspired other wineries, such as <strong data-start=\"3555\" data-end=\"3569\">Ak\u00e8nta Sub<\/strong> in Sardinia or <strong data-start=\"3583\" data-end=\"3604\">Tenuta del Paguro<\/strong> in the Adriatic. <\/p>\n<ul>\n<li>\n<h5><a href=\"https:\/\/lavozdeibiza.com\/que-hacer-en-ibiza-y-formentera\/un-viaje-de-sabores-de-nueva-york-a-ibiza-pan-artesanal-y-vino-italiano-en-el-corazon-de-la-isla\/?swcfpc=1\">A journey of flavors: from New York to Ibiza, artisan bread and Italian wine in the heart of the island<\/a><\/h5>\n<\/li>\n<\/ul>\n<p data-start=\"3623\" data-end=\"4199\">In France, following the 2010 discovery of 1840s champagne bottles in the Baltic Sea, <strong data-start=\"3710\" data-end=\"3728\">Veuve Clicquot<\/strong> initiated the <strong data-start=\"3751\" data-end=\"3772\">Cellar in the Sea<\/strong> experiment, submerging bottles in the \u00c5land Islands for decades.<\/p>\n<p data-start=\"3623\" data-end=\"4199\"><strong data-start=\"3848\" data-end=\"3879\">Ch\u00e2teau Larrivet Haut-Brion<\/strong>, in Bordeaux, aged a 56-liter barrel under the Atlantic Ocean, resulting in a wine with lower alcohol content and saline nuances. In the French Basque Country, the <strong data-start=\"4053\" data-end=\"4066\">Egiategia<\/strong> project goes further and directly carries out <strong data-start=\"4102\" data-end=\"4161\">underwater fermentation in tanks at a depth of 15 meters.<\/strong> <\/p>\n<h2 data-start=\"4206\" data-end=\"4253\">America: between innovation and marketing<\/h2>\n<p data-start=\"4255\" data-end=\"4741\">Chile has been another pioneer in the American continent. <strong data-start=\"4291\" data-end=\"4309\">Vi\u00f1a Casanueva<\/strong>, with its <strong data-start=\"4324\" data-end=\"4344\">Cavas Submarinas<\/strong> brand, submerged its first harvest in 2005 in the <strong data-start=\"4388\" data-end=\"4409\">Zapallar Bay<\/strong>. <\/p>\n<p data-start=\"4255\" data-end=\"4741\">Today it offers tourist experiences where visitors <strong data-start=\"4465\" data-end=\"4519\">dive into a padlocked underwater chest<\/strong>, retrieve a bottle and taste it on the surface.
