The vast majority of establishments already have <strong data-start=\"257\" data-end=\"287\">all their tables reserved<\/strong> for the last night of the year, as confirmed by the sector. <\/p>\n<p data-start=\"383\" data-end=\"756\">From the PIMEEF restaurant sector explained to <em>IB3<\/em> that this &#8220;all booked up&#8221; is not only due to the increase in demand, but also to the fact that <strong data-start=\"530\" data-end=\"596\">the number of businesses that open during these dates has dropped<\/strong>. In recent years, they estimate that the number of restaurants operating at Christmas has fallen by around <strong data-start=\"710\" data-end=\"717\">10%<\/strong>. <\/p>\n<h2 data-start=\"383\" data-end=\"756\">Difficulty in finding personnel<\/h2>\n<p data-start=\"758\" data-end=\"1127\">The causes, they point out, are related to the <strong data-start=\"805\" data-end=\"843\">difficulty in finding personnel<\/strong> and to the fact that the summer seasons are becoming longer and longer, which makes it difficult to maintain activity in winter. The result is that the few establishments that do open during these holidays are practically guaranteed to be full. <\/p>\n<p data-start=\"1129\" data-end=\"1494\">Thus, those who have not yet booked and want to find a place for these dates will have to <strong data-start=\"1217\" data-end=\"1257\">wait for last-minute cancellations<\/strong>.
